No-Bake Carrot Cake Bites
Ingredients
- 1 cup rolled oats
- 1/2 cup walnuts
- 12 medjool dates
- 1/2 cup grated carrots
- 1 tsp vanilla
- 1 TBS maple syrup
- 1 tsp cinnamon
- shredded coconut for rolling
Preparation
Cut out pits of dates and soak in warm water for about 5 minutes.
Drain the water and place dates in a food processor or powerful blender along with the rest of the ingredients except the coconut and blend until it becomes a dough.
Form the dough into tablespoon-sized balls.
Add shredded coconut to a plate and roll each ball in the coconut shreds.
Enjoy and refrigerate the leftovers.

These make for a great healthy snack on-the-go or a quick healthy dessert and are gluten-free and vegan.
