No-Bake Carrot Cake Bites

Ingredients

  • 1 cup rolled oats
  • 1/2 cup walnuts
  • 12 medjool dates
  • 1/2 cup grated carrots
  • 1 tsp vanilla
  • 1 TBS maple syrup
  • 1 tsp cinnamon
  • shredded coconut for rolling

Preparation

  1. Cut out pits of dates and soak in warm water for about 5 minutes.

  2. Drain the water and place dates in a food processor or powerful blender along with the rest of the ingredients except the coconut and blend until it becomes a dough.

  3. Form the dough into tablespoon-sized balls.

  4. Add shredded coconut to a plate and roll each ball in the coconut shreds.

  5. Enjoy and refrigerate the leftovers.

Tips

  1. These make for a great healthy snack on-the-go or a quick healthy dessert and are gluten-free and vegan.
