Double Chocolate Energy Bites
Ingredients
- 1/2 cup cashews
- 3/4 cup oats
- 1/4 cup shredded coconut
- 3 tbsp Dutch-processed cocoa powder
- Pinch of salt
- 2 tbsp almond butter
- 6 Medjool dates, pitted
- 2-3 tbsp water
- 3/4 cup dark chocolate chips
- 2 tsp coconut oil
Preparation
Combine cashews, oats, coconut, cocoa powder, and salt in a food processor.
Blitz until a coarse powdery mixture forms.
Add almond butter, dates, and 2 tbsp of water.
Process on high for 30 sec-1 min. until a dough starts to form.
Add 1-2 tbsp more water if needed. The dough should be able to stick between your fingers.
Roll dough into balls then place on a parchment-lined baking sheet.
Freeze for 10 min.
Meanwhile, melt the chocolate and coconut oil.
Coat each ball in chocolate and top with flaky sea salt.
Freeze for 15 min. to set.
Storage
Store bites in an airtight container in the freezer for up to 2 months.
