Vegan Cookie Dough Truffles

Ingredients

  • 2 cans of chickpeas (400g each)
  • 5 tablespoons almond butter or peanut butter
  • 3/4 cup oats
  • 4 tablespoons maple syrup
  • A pinch of salt
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups dark chocolate chips
  • 1 teaspoon coconut oil

Preparation

  1. Rinse the chickpeas well and dry them with a clean tea towel. Put them in the food processor.

  2. Add the nut butter, oats, maple syrup, vanilla extract, and salt and mix until a thick mass.

  3. Put the mixture in a bowl and add 50 grams of finely chopped dark chocolate. Mix well.

  4. Make balls with your hands and place them on a plate. Melt the remaining chocolate with coconut oil and dip the balls in it.

  5. Place the balls on a plate and put them in the refrigerator to harden.

Notes

  1. This recipe yields 16-20 truffles and can be prepared in under 20 minutes.
