Vegan Cookie Dough Truffles
Ingredients
- 2 cans of chickpeas (400g each)
- 5 tablespoons almond butter or peanut butter
- 3/4 cup oats
- 4 tablespoons maple syrup
- A pinch of salt
- 1/2 teaspoon vanilla extract
- 1 1/2 cups dark chocolate chips
- 1 teaspoon coconut oil
Preparation
Rinse the chickpeas well and dry them with a clean tea towel. Put them in the food processor.
Add the nut butter, oats, maple syrup, vanilla extract, and salt and mix until a thick mass.
Put the mixture in a bowl and add 50 grams of finely chopped dark chocolate. Mix well.
Make balls with your hands and place them on a plate. Melt the remaining chocolate with coconut oil and dip the balls in it.
Place the balls on a plate and put them in the refrigerator to harden.
Notes
This recipe yields 16-20 truffles and can be prepared in under 20 minutes.
