Choc Almond Fudge Cups

Ingredients

For the Base

  • 1 cup Dates (soaked)
  • 1 cup Almonds
  • 1/4 cup Chocolate Protein Powder
  • Pinch of Salt

For the Fudge

  • 1/2 cup Almond Butter
  • 1/3 cup Coconut Oil
  • 1/4 cup Maple Syrup

Preparation

  1. Add base ingredients to a blender - I used my @vitamix_aunz. Blend until mixture is combined and forms a thick dough consistency.

  2. Press into silicone muffin molds and set aside in the fridge.

  3. Make fudge by adding almond butter, coconut oil, and maple syrup to a bowl and microwaving for 45 seconds.

  4. Pour the fudge over the top of the bases and return to the fridge for at least 30 minutes to set.

  5. Optional: top with chopped almonds and cacao nibs.

  6. Store in the fridge for 4-5 days. Can also be frozen and left in the fridge to soften before eating.
