Vegan Gluten-Free Cookie Dough Truffles
Ingredients
- 2 cans of chickpeas (400g)
- 5 tbsp almond butter or peanut butter
- 3/4 cup of oats
- 4 tbsp agave syrup
- A pinch of salt
- 1/2 tsp vanilla extract
- 1 1/2 cup dark chocolate (chips)
- 1 tsp coconut oil
Preparation
Rinse the chickpeas well and dry them with a clean tea towel. Put them in the food processor.
Add the nut butter, oats, maple syrup or agave syrup, vanilla extract, and salt, and mix until a thick mass forms.
Transfer the mixture to a bowl and add 50g finely chopped dark chocolate. Mix it well.
Form balls with your hands and place them on a plate. Melt the remaining chocolate with coconut oil and dip the balls in it.
Place the balls on a plate and put them in the refrigerator to harden.

This recipe is ready in 30 minutes and is vegan, gluten-free, and soy-free.
