Vegan Gluten-Free Cookie Dough Truffles

Ingredients

  • 2 cans of chickpeas (400g)
  • 5 tbsp almond butter or peanut butter
  • 3/4 cup of oats
  • 4 tbsp agave syrup
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 1 1/2 cup dark chocolate (chips)
  • 1 tsp coconut oil

Preparation

  1. Rinse the chickpeas well and dry them with a clean tea towel. Put them in the food processor.

  2. Add the nut butter, oats, maple syrup or agave syrup, vanilla extract, and salt, and mix until a thick mass forms.

  3. Transfer the mixture to a bowl and add 50g finely chopped dark chocolate. Mix it well.

  4. Form balls with your hands and place them on a plate. Melt the remaining chocolate with coconut oil and dip the balls in it.

  5. Place the balls on a plate and put them in the refrigerator to harden.

Notes

  1. This recipe is ready in 30 minutes and is vegan, gluten-free, and soy-free.
