No-Bake Pumpkin Chocolate Chip Pecan Cookie Dough

Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup nut/seed butter
  • 1 tsp vanilla extract
  • 2/3 cup coconut flour
  • 2 tsps pumpkin pie spice
  • 1/2 tsp salt
  • 2–4 tbsp non-dairy milk (as needed)
  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped pecan

Preparation

  1. Whisk together the pumpkin, maple syrup, and nut or seed butter.

  2. Add the coconut flour, pumpkin pie spice, and salt.

  3. Mix to form a thick batter, adding non-dairy milk as needed if it is too dry or crumbly.

  4. Stir in the dark chocolate chips and chopped pecans.

  5. Scoop the dough, then chill it for at least 1 hour before eating.

Storage

  1. Store in the fridge for up to a week.
