No-Bake Pumpkin Chocolate Chip Pecan Cookie Dough
Ingredients
- 3/4 cup pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup nut/seed butter
- 1 tsp vanilla extract
- 2/3 cup coconut flour
- 2 tsps pumpkin pie spice
- 1/2 tsp salt
- 2–4 tbsp non-dairy milk (as needed)
- 1/4 cup dark chocolate chips
- 1/4 cup chopped pecan
Preparation
Whisk together the pumpkin, maple syrup, and nut or seed butter.
Add the coconut flour, pumpkin pie spice, and salt.
Mix to form a thick batter, adding non-dairy milk as needed if it is too dry or crumbly.
Stir in the dark chocolate chips and chopped pecans.
Scoop the dough, then chill it for at least 1 hour before eating.
Storage
Store in the fridge for up to a week.
