Vegan Gluten-Free Feel Good Blondies

Ingredients

  • 1 can chickpeas
  • 4 tbsp oats
  • 3 tbsp peanut butter
  • 2 tbsp dark chocolate chips
  • 3 tbsp sweetener or maple syrup or coconut sugar

Preparation

  1. Pre-heat oven to 200C/ 400F/ Gas Mark 6.

  2. Drain then blend chickpeas until smooth.

  3. Blend oats to a flour.

  4. Put everything into a bowl and mix with a spoon.

  5. Pour into a shallow oven-proof dish lined with baking parchment or paper and cook for 35 minutes or until crisp on the outside and squidgy in the middle.

Notes

  1. This recipe yields 4 large blondie chunks.
