Oatmeal Cookie Dough Energy Bites
Ingredients
- 1 cup soft medjool dates
- 3/4 cup pecans
- 1/2 cup cashews
- 1/2 cup almond flour
- 1/2 cup GF rolled oats
- 1/2 cup hemp seed
- 1 tablespoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
- 1-3 tablespoons water
Toppings
- 1 tablespoon rolled oats and 1 tablespoon hemp seed
- dark chocolate chips
- chopped pecans
Preparation
If dates are hard, soak them in hot water for 10 minutes.
Add all ingredients except water to a food processor and mix on high until well combined, for 30 to 90 seconds.
Add water one tablespoon at a time until the desired texture is achieved; typically 1.5 to 2 tablespoons are needed.
Roll the mixture into balls and coat with toppings of choice.
Store in an airtight container on the counter, in the fridge, or in the freezer.
