Mint Chocolate Protein Bliss Balls

Ingredients

  • 1 C raw cashews
  • 10 soft pitted medjool dates
  • 1/4 C raw unsweetened cacao powder, plus extra for coating
  • 1/4 C cacao nibs
  • 1/2 C ground flax seed
  • 1/2 C hemp seed
  • 1/4 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 C espresso powder (optional)
  • 1-2 TBSP water (if needed)
  • 1/4 C sugar free vegan dark chocolate chips

Preparation

  1. Add all ingredients except water and chocolate chips to a food processor. Mix on high until combined, stopping to scrape down sides a few times. If the texture is crumbly, add water starting with 1 tablespoon or less.

  2. When a nice sticky dough is achieved, roll into balls and press on chocolate chips or roll in additional cacao.

  3. Store in fridge for extra longevity or on counter for up to a week.
