Mint Chocolate Protein Bliss Balls
Ingredients
- 1 C raw cashews
- 10 soft pitted medjool dates
- 1/4 C raw unsweetened cacao powder, plus extra for coating
- 1/4 C cacao nibs
- 1/2 C ground flax seed
- 1/2 C hemp seed
- 1/4 tsp peppermint extract
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 C espresso powder (optional)
- 1-2 TBSP water (if needed)
- 1/4 C sugar free vegan dark chocolate chips
Preparation
Add all ingredients except water and chocolate chips to a food processor. Mix on high until combined, stopping to scrape down sides a few times. If the texture is crumbly, add water starting with 1 tablespoon or less.
When a nice sticky dough is achieved, roll into balls and press on chocolate chips or roll in additional cacao.
Store in fridge for extra longevity or on counter for up to a week.
