Nut-Free Chocolate Protein Bites

Ingredients

  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup raw cacao powder
  • 1 tsp vanilla extract or powder
  • 1 cup pitted medjool dates
  • 1/4 cup plant protein powder (optional)
  • Non-dairy dark chocolate (optional)

Preparation

  1. Add pumpkin and sunflower seeds to a food processor and process until they form a flour.

  2. Add cacao powder, vanilla, dates and protein powder if using, and process until a dough forms.

  3. Roll into bites.

  4. Dip in melted dark non-dairy chocolate if desired.

Tips

  1. If using protein powder, add an additional 1-2 dates and an extra teaspoon of vanilla extract to achieve optimal texture and sweetness.

  2. Store in the fridge for one week or in the freezer for 1-3 months.
