Nut-Free Chocolate Protein Bites
Ingredients
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 cup raw cacao powder
- 1 tsp vanilla extract or powder
- 1 cup pitted medjool dates
- 1/4 cup plant protein powder (optional)
- Non-dairy dark chocolate (optional)
Preparation
Add pumpkin and sunflower seeds to a food processor and process until they form a flour.
Add cacao powder, vanilla, dates and protein powder if using, and process until a dough forms.
Roll into bites.
Dip in melted dark non-dairy chocolate if desired.
Tips
If using protein powder, add an additional 1-2 dates and an extra teaspoon of vanilla extract to achieve optimal texture and sweetness.
Store in the fridge for one week or in the freezer for 1-3 months.
