Quick and Nutritious Pecan Oatmeal Cookies

Ingredients

  • 1 1/2 cups oats
  • 2 ripe bananas, mashed
  • 3 tbsp pecan nut butter or other nut butter
  • 2 tsp cinnamon
  • 1/2 cup chopped pecans + extra for topping
  • A pinch of salt

Preparation

  1. Mash the bananas in a bowl and add the remaining ingredients.

  2. Mix everything together and form 8-10 cookie shapes using your hands.

  3. Place the cookies on a baking sheet and press a whole pecan nut on top of each cookie.

  4. Bake the cookies for 20 minutes at 180°C (375°F).

  5. Remove from the oven and let them cool for 15 minutes before enjoying.
