Oatmeal Cookie Dough Energy Bites

Ingredients

  • 1 C soft medjool dates
  • 3/4 C pecans
  • 1/2 C cashews
  • 1/2 C almond flour
  • 1/2 C GF rolled oats
  • 1/2 C hemp seed
  • 1 TBSP vanilla extract
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 1-3 TBSP water

Toppings

  • 1 TBSP rolled oats + 1 TBSP hemp seed
  • dark chocolate chips
  • chopped pecans

Preparation

  1. Add all ingredients except water to a food processor and mix on high until well combined for 30-90 seconds.

  2. Add water one tablespoon at a time to achieve the right texture; typically 1.5-2 tablespoons are used and the mixture will become doughy quickly.

  3. Once the desired texture is achieved, roll into balls and coat with toppings of choice.

  4. Store in an airtight container on the counter, in the fridge, or in the freezer.

Tips

  1. If dates are too hard, soak them in hot water for 10 minutes before using.

  2. The amount of water needed depends on the moisture of the dates.
