No-Bake Chocolate Chip Cookie Dough Bites

Ingredients

  • 1/4 cup vegan butter, melted (1/2 stick of butter, melted)
  • 1/4 cup packed dark brown sugar
  • 2 tbsp granulated sugar
  • 1 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 3/4 tsp kosher salt
  • 1/2 cup choc chips
  • 6.5 oz dark chocolate bar
  • 2 tsp coconut oil
  • Flaky sea salt

Preparation

  1. In a large mixing bowl, whisk together butter, sugars, milk, and vanilla until creamy.

  2. Stir in almond flour and salt until a soft cookie dough forms.

  3. Fold in chocolate chips.

  4. Take 1 tbsp of dough and roll into balls.

  5. Freeze for 10 min.

  6. Melt dark chocolate with coconut oil.

  7. Coat each cookie dough bite with dark chocolate and top with a sprinkle of flaky sea salt.

  8. Refrigerate for 10 min to set.

Notes

  1. Store bites in fridge in an airtight container for up to 2 weeks.
