Peanut Butter Hemp Crispy Treats

Ingredients

  • 1 cup peanut butter (runny organic, plus more for topping)
  • 7 tbsp maple syrup (local organic)
  • 2 tbsp coconut oil
  • 1 tsp vanilla
  • Pinch salt
  • 1/4 cup hemp seeds (plus more for topping)
  • 4 cups puffed rice

Preparation

  1. Melt the peanut butter, maple syrup, and coconut oil in the microwave or on the stovetop.

  2. Add vanilla and a pinch of salt, then mix well.

  3. In a large bowl, add the puffed rice.

  4. Pour the peanut butter mixture over the puffed rice and stir to combine.

  5. Add the hemp seeds and stir to coat evenly.

  6. Transfer the mixture to a parchment-lined 8x8 inch pan and press firmly.

  7. Drizzle with more peanut butter, sprinkle with additional sea salt and hemp seeds.

  8. Place in the freezer for 2 hours, then cut into bars and enjoy.
