Peanut Butter Pitaya Chocolate Dessert Cups
Ingredients
For the cups
- 50g Dark Chocolate
Peanut butter layer
- 1/4 cup Protein Powder
- 3 tbs Coconut Yoghurt
- 1 tbs Peanut Butter
Pitaya layer
- 1/4 cup Coconut Yoghurt
- 1 tbs Protein Powder
- 1 tsp Pitaya Powder
- 1 tsp Coconut Oil
Preparation
Melt dark chocolate and use 3/4 to line muffin cases. Put in the freezer to set.
Make peanut butter layer by mixing all ingredients together until combined and thick. Press into set cups. Put back in the freezer.
Make pitaya layer by whisking ingredients together until smooth. Add on top of peanut butter layer.
Top with remaining chocolate and leave in the fridge to set.
