Peanut Butter Cup Bars
Ingredients
Chocolate layer
- 1 cup oat flour
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 3 tbsp cocoa powder
Peanut butter layer
- 2/3 cup peanut butter
- 1/3 cup maple syrup
- 1/3 cup oat flour
Date caramel
- 1 cup dates (soaked in hot water for 15 minutes)
- 1 tbsp peanut butter
- 3 tbsp coconut yoghurt
- Pinch of salt
Chocolate coating
- 100g chocolate
- 1 tbsp coconut oil
Preparation
Mix all the ingredients for the chocolate layer.
Line a small container with parchment paper and spread the mixture evenly.
Mix all the peanut butter layer ingredients and pour the mixture over the base.
Blend the dates with peanut butter, coconut yoghurt, and a pinch of salt, then spread over the peanut layer.
Let it sit in the freezer for a few hours.
Slice into bars.
Melt 100g chocolate with 1 tbsp coconut oil and cover the bars with it.

Store in the fridge or in the freezer.
