Peanut Butter Fudge Bars
Ingredients
Base
- 1 1/2 cups hemp porridge or quick oats
- 1/4 cup coconut oil
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Filling
- 3/4 cup crunchy peanut butter (or smooth)
- 3/4 cup vegan chocolate
Preparation
Place the base ingredients in a medium pot and cook for a couple of minutes until well combined and cooked out, then place in a bowl and cool.
Press half the mixture into the bottom of a lined loaf pan.
Melt the chocolate and peanut butter together until completely combined, such as in the microwave in 30-second increments.
Pour this over the base and place in the freezer until firm enough to press the second half of the base over the top.
Put back into the freezer for 1 hour or more, then slice.
Storage tips
Store in the fridge in a sealed container.
This keeps really well in the freezer; just pull it out when you want to eat it, allowing a few minutes to thaw out.
