Peanut Butter and Jelly Cups

Ingredients

Bottom layer

  • 3 tablespoons peanut butter
  • 2 tablespoons coconut oil
  • 1 tablespoon maple syrup

Middle layer

  • 1 cup raspberries
  • 1 teaspoon lemon juice
  • 1 tablespoon maple syrup

Top layer

  • 100 grams vegan dark chocolate
  • 1 teaspoon coconut oil

Preparation

  1. Melt the peanut butter, coconut oil, and maple syrup together in a microwave-proof dish and pour into patty pans. Set in the freezer while making the raspberry jam.

  2. Place the raspberries, lemon juice, and maple syrup in a saucepan over medium heat, melt the raspberries, and simmer until it thickens into a jammy consistency. Then place a teaspoon of the jam over the peanut butter mixture.

  3. Melt the vegan dark chocolate and coconut oil together, then pour over the jam layer. Place the cups in the freezer for at least 1 hour or until set.

  4. Enjoy the PB&J cups.

Notes
