Chocolate Peanut Butter Pinwheel Cookies
Ingredients
- 120g oat flour (blended from plain rolled oats)
- 55g cocoa powder
- 1/4 tsp salt
- 4 tbsp maple syrup
- 3-4 tbsp melted coconut oil
Peanut butter layer
- 5 tbsp smooth peanut butter
- 1 tbsp maple syrup
Preparation
In a large bowl, mix together the oat flour, cocoa powder, and salt.
Mix in the maple syrup and melted coconut oil to achieve a dough consistency.
Roll out the dough between two pieces of parchment paper to about 1cm thickness.
In another bowl, mix the peanut butter and maple syrup.
Spread the peanut butter mixture onto the chocolate dough layer.
Carefully roll up the layers tightly.
Transfer to the freezer and chill for 30-60 minutes.
Slice into pinwheels and serve.
Storage
Store in the fridge in an air-tight container.
