No Bake Caramel Chocolate Brownie Slice

Ingredients

Brownie base

  • 1 cup oat flour
  • 1/4 cup cacao powder
  • 1/4 cup maple syrup
  • 1 tablespoon nondairy milk (if needed for the dough to not be crumbly)
  • vegan chocolate chips
  • a pinch of salt

Caramel

  • 1 cup pitted medjool dates
  • 1/4 cup + 1 tablespoon seed butter (or nut butter)
  • 1/4 cup nondairy milk

Preparation

  1. Mix everything together until it forms a dough, then press it evenly into the bottom of a parchment-lined bread pan.

  2. In a food processor, blend everything until smooth, layer on top of the brownie crust and spread evenly.

  3. Sprinkle over top some seeds or cacao nibs and lightly press them into the caramel, melt some chocolate chips and drizzle over top.

  4. Let set in the fridge for a few hours, then slice and enjoy.

Tips

  1. A pinch of salt helps bring out the chocolate taste.

  2. Add nondairy milk only if the dough is crumbly to adjust consistency.

  3. Seed butter can be used for a nut-free version with a butterscotch-like flavor.
