Vegan Almond Biscoff Slice

Ingredients

Base

  • 1 cup ground almonds
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp cacao powder
  • Pinch of salt

Top layer

  • 1/2 cup Biscoff spread
  • 2 tbsp coconut oil

Drizzle

  • 2 tbsp chocolate

Preparation

  1. Add the almonds to a high powered blender and blend down to form a flour. Transfer to a bowl and mix with the coconut oil, maple syrup, cacao powder and salt.

  2. Transfer the mixture to a container lined with baking paper. Press it in until the top is smooth and place in the freezer for 10 to 15 minutes while preparing the next step.

  3. Melt the Biscoff in a bowl in the microwave for about 20 seconds. Add the coconut oil and mix together. Remove the container from the freezer and pour the Biscoff mixture on top. Return to the freezer for 1 hour.

  4. After 1 hour, melt the chocolate. Remove the container from the freezer, pull out the slice using the baking paper, drizzle the melted chocolate on top, cut into desired pieces and enjoy.

Storage

  1. Store in a container in the freezer. You can keep it in the fridge, but it will be quite soft. Tag me if you give it a try.
