Peanut Butter Hemp Crispy Treats

Ingredients

  • 1 cup peanut butter (runny organic, plus more for topping)
  • 7 tbsp maple syrup (local organic)
  • 2 tbsp coconut oil
  • 1 tsp vanilla
  • Pinch salt
  • 1/4 cup hemp seeds (plus more for topping)
  • 4 cups puffed rice

Preparation

  1. Melt peanut butter, maple syrup, and coconut oil in microwave or on stovetop.

  2. Add vanilla and a pinch of salt, then mix well.

  3. In a large bowl, add puffed rice.

  4. Pour the peanut butter mixture over the puffed rice and stir to combine.

  5. Add hemp seeds and stir to coat evenly.

  6. Transfer the mixture to a parchment-lined 8x8 pan and press firmly.

  7. Drizzle more peanut butter, sprinkle more sea salt and hemp seeds on top.

  8. Place in the freezer for 2 hours, then cut into bars and enjoy.
