Mini Holiday Pies with Cereal Crust
Ingredients
Crust
- 2 cups Barbara's Bakery Puffins Original Cereal
- 2 tbsp sugar
- 1/2 cup coconut oil
- 1/4 tsp vanilla
- dash of salt
Pie filling
- 7 oz tofu
- 1/2 cup peanut butter
- 1/2 cup chocolate chips
- 1/4 cup maple syrup
- 1/4 cup dairy free milk
- 1/2 tsp vanilla
- dash of salt
Preparation
Add the Puffins Original Cereal to the food processor
Pulse until the cereal forms a powder
Add in the rest of the crust ingredients and pulse
Line a muffin pan and add about 1 tablespoon of the crust to each muffin cup
Use your finger to pat the crust down and set aside
Add all of the filling ingredients to a food processor and blend until creamy
Add the filling to each muffin cup
Refrigerate until the chocolate hardens
Add vanilla frosting to a piping bag and frost the top of each pie
Add a strawberry and extra frosting to form the Santa hat
The pies are ready to enjoy
