Mini Holiday Pies with Cereal Crust

Ingredients

Crust

  • 2 cups Barbara's Bakery Puffins Original Cereal
  • 2 tbsp sugar
  • 1/2 cup coconut oil
  • 1/4 tsp vanilla
  • dash of salt

Pie filling

  • 7 oz tofu
  • 1/2 cup peanut butter
  • 1/2 cup chocolate chips
  • 1/4 cup maple syrup
  • 1/4 cup dairy free milk
  • 1/2 tsp vanilla
  • dash of salt

Preparation

  1. Add the Puffins Original Cereal to the food processor

  2. Pulse until the cereal forms a powder

  3. Add in the rest of the crust ingredients and pulse

  4. Line a muffin pan and add about 1 tablespoon of the crust to each muffin cup

  5. Use your finger to pat the crust down and set aside

  6. Add all of the filling ingredients to a food processor and blend until creamy

  7. Add the filling to each muffin cup

  8. Refrigerate until the chocolate hardens

  9. Add vanilla frosting to a piping bag and frost the top of each pie

  10. Add a strawberry and extra frosting to form the Santa hat

  11. The pies are ready to enjoy
