Chocolate Oat Crunch Bars

Ingredients

  • 1 1/2 cups rolled oats
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tbsp melted coconut oil
  • 3/4 cup chocolate chips
  • 1/2 cup slivered almonds

Preparation

  1. In a small saucepan, whisk together peanut butter, maple syrup, and coconut oil until oil is melted and mixture is homogenous.

  2. Take off the heat and whisk in vanilla.

  3. Pour into a bowl with the oats.

  4. Combine using a spatula until a sticky mixture forms.

  5. Press oat mixture into the bottom of a lined loaf pan.

  6. Melt chocolate and spread over top of oat layer.

  7. Sprinkle on sliced almonds.

  8. Freeze for 15 min. to set.
