Chocolate Oat Crunch Bars
Ingredients
- 1 1/2 cups rolled oats
- 1 tsp vanilla
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1 tbsp melted coconut oil
- 3/4 cup chocolate chips
- 1/2 cup slivered almonds
Preparation
In a small saucepan, whisk together peanut butter, maple syrup, and coconut oil until oil is melted and mixture is homogenous.
Take off the heat and whisk in vanilla.
Pour into a bowl with the oats.
Combine using a spatula until a sticky mixture forms.
Press oat mixture into the bottom of a lined loaf pan.
Melt chocolate and spread over top of oat layer.
Sprinkle on sliced almonds.
Freeze for 15 min. to set.
