Vegan Almond Joy Bars

Ingredients

Base

  • 1 1/2 cups coconut flakes
  • 1 cup oats (can sub more coconut)
  • 1/4 cup + 1 tbsp maple syrup
  • 1/4 cup melted coconut oil (or other oil)

Filling

  • 3/4 cup almond butter
  • 3/4 cup chocolate chips
  • pinch of sea salt
  • 1/4 tsp almond extract (optional / can sub vanilla)

Topping

  • chopped almonds

Preparation

  1. Mix together the base ingredients and press a little over half of it into the bottom of a lined loaf pan.

  2. Melt together the filling ingredients until smooth.

  3. Pour the filling over the base and place in the freezer for an hour or so until firm.

  4. Sprinkle the remaining base mixture over the top along with the chopped almonds, pressing it down slightly.

  5. Return to the freezer for another hour or so before cutting into bars.

Notes

  1. Store in the freezer.
