Chocolate Coconut Samoa Bites
Ingredients
Base
- 1 1/2 cups almond flour
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
Filling
- 1 cup chopped & pitted dates
- 1/3 cup coconut cream (only the thick part, not the clear liquid)
- 1/4 cup cashew butter
- 1/2 tsp vanilla
- 1/2 cup shredded coconut
Chocolate Layer
- 1/2 cup chocolate chips
- 1/2 tbsp coconut oil
Preparation
Base
Mix together all of the ingredients.
Add the mixture to a loaf pan lined with parchment paper.
Bake at 350°F (175°C) for 10 minutes.
Allow it to cool, then add the filling on top.
Filling
In a food processor, mix together the dates, coconut cream, cashew butter, and vanilla until well combined.
Stir in the shredded coconut.
Optionally, add some mini chocolate chips.
Spread the filling on top of the cooled base.
Topping
Melt the chocolate chips and coconut oil together. You can microwave them for 30 seconds, stirring, and repeating until melted.
Sprinkle more shredded coconut on top of the filling, then drizzle the melted chocolate over it.
Final Steps
Place the pan in the freezer and let it set overnight.
Remove from the freezer and cut into bite-sized pieces.
