Vegan Sugar-Free Twix Bars

Ingredients

Bottom

  • 240g gluten-free oats
  • 100g Medjool dates
  • 100g coconut oil

Caramel

  • 400g dates
  • 100g coconut oil
  • 100g salted peanut butter

Chocolate

  • 200g sugar-free dark chocolate

Preparation

  1. Blend the oats until you have a flour-like consistency.

  2. Add the dates and coconut oil until well combined.

  3. With your fingers, press the mixture into a rectangular pan lined with baking paper and put it in the fridge.

  4. For the caramel, soak the dates in hot water for 20 minutes.

  5. Combine the soaked dates with peanut butter and oil in a blender until you reach a sticky mass.

  6. Spread the caramel over the bottom layer and freeze for 1 hour.

  7. Slice into rectangular bars and cover with the melted chocolate.

Tips

  1. Store in the fridge for up to 1 week.
