Red Velvet Energy Balls

Ingredients

  • 1 cup pitted dates
  • 1/2 cup almond flour
  • 1/4 cup chocolate plant protein powder
  • 2 tbsp cacao powder
  • 1/4 cup freeze-dried raspberries
  • 3 tbsp maple syrup
  • 1 tbsp almond butter
  • 1/2 tsp vanilla extract
  • A pinch of sea salt
  • 1/4 cup vegan dark chocolate chips
  • 1–2 tbsp water (only if needed)

Coating

  • 1/2 cup vegan dark chocolate chips
  • 1 tsp coconut oil
  • Additional crushed freeze-dried raspberries

Preparation

  1. Soak the pitted dates in warm water for 10 minutes, then drain.

  2. Crush the freeze-dried raspberries into powder.

  3. In a food processor, combine the drained dates, almond flour, chocolate plant protein powder, cacao powder, raspberry powder, maple syrup, almond butter, vanilla extract, sea salt, and vegan dark chocolate chips.

  4. Blend until the mixture comes together, adding water if necessary to bind.

  5. Roll the mixture into balls.

Coating

  1. Melt the vegan dark chocolate chips with coconut oil.

  2. Dip the balls in the melted chocolate and coat with the additional crushed freeze-dried raspberries.

  3. Allow the coated balls to set before serving.
