No-Bake Double Chocolate Cashew Dessert

Ingredients

Crust

  • 8oz Emmy's Organics Dark Cacao Coconut Cookies
  • 1/4 cup coconut oil, melted

Filling

  • 1 1/2 cup raw cashews, soaked overnight
  • 1 can full fat coconut milk
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 heaped cup semi-sweet chocolate chips

Preparation

Crust

  1. Blend the cookies in a food processor until ground.

  2. Stream in melted coconut oil.

  3. Blend for another 30 seconds.

  4. You should have a moist consistency that sticks together when pressed.

  5. Press into the bottom of a 7 or 8 inch springform pan with a circle of parchment on the bottom for easier removal.

Filling

  1. Drain and rinse the soaked cashews.

  2. Melt the chocolate chips.

  3. Blend everything until combined and very creamy.

  4. Pour over the crust and refrigerate overnight.

Topping and serving

  1. Top with a drizzle of melted chocolate and more crumbled cookies.

  2. Slice and enjoy.
