Vegan Apple Pie Omelette

Ingredients

  • 2/3 cup buckwheat flour
  • 1/2-2/3 cup plant milk
  • 2-3 tbsp maple syrup
  • 2 tbsp @unicornsuperfoods salted caramel protein powder (optional)
  • 1 tbsp flax meal
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/3 tsp cinnamon
  • 1 chopped apple

Preparation

  1. In a bowl, combine buckwheat flour, plant milk, maple syrup, salted caramel protein powder (if using), flax meal, baking powder, vanilla extract, and cinnamon.

  2. Mix the ingredients until well combined to form a batter.

  3. Gently fold in the chopped apple.

  4. Heat a non-stick skillet over medium heat and lightly grease it.

  5. Pour a ladleful of the batter onto the skillet and spread it evenly to form a circular shape.

  6. Cook the omelette for a few minutes until bubbles start to form on the surface.

  7. Carefully flip the omelette and cook for another couple of minutes on the other side.

  8. Once cooked through, transfer the omelette to a plate.

  9. Serve the apple pie omelette with your favorite toppings. In this case, top it with soy yogurt, peanut butter, sliced apple, and sesame seeds.
