Carrot Cake Oatmeal Delight

Ingredients

  • 2/3 cup oats
  • 1 1/2 cup plant milk
  • 1/2 cup grated carrot
  • 1 tbsp chopped walnuts/pecans
  • 1 tbsp flax/chia
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • Spices: cinnamon, nutmeg, cardamom

Preparation

  1. In a medium-sized saucepan, combine oats and plant milk.

  2. Add the grated carrot and stir well.

  3. Incorporate the chopped walnuts or pecans, flax or chia seeds, and maple syrup.

  4. Mix in the vanilla extract and the aromatic spices: cinnamon, nutmeg, and cardamom.

  5. Cook the mixture over medium heat, stirring frequently, until it thickens and becomes creamy.

  6. Once the oatmeal reaches the desired consistency, remove from heat.
