Festive Peppermint Chocolate Donuts

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 3 tbsp maple syrup
  • 1/2 tsp peppermint extract
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 cup chocolate chips
  • 1 tsp coconut oil
  • Crushed candy canes (optional)

Preparation

  1. Preheat the oven to 325°F (163°C).

  2. In a bowl, whisk the eggs, then add almond flour, unsweetened cocoa powder, maple syrup, peppermint extract, vanilla, and baking powder. Mix everything together until well combined.

  3. Grease a donut pan, preferably a silicone one for easy removal.

  4. Fill each donut cavity with the batter, filling them about 3/4 of the way up. This recipe makes 6-7 donuts.

  5. Bake the donuts in the preheated oven for 12 minutes or until a toothpick inserted into the center comes out clean.

  6. Allow the donuts to cool, then remove them from the pan.

  7. In a microwave-safe bowl, melt the chocolate chips with coconut oil. Stir until smooth and well combined.

  8. Dip the top of each donut into the melted chocolate mixture.

  9. Optionally, sprinkle crushed candy canes on top of the chocolate coating.

  10. If desired, refrigerate the donuts to allow the chocolate topping to harden.

  11. Serve and enjoy!
