S'mores Cookie Cups

Ingredients

  • 1 egg
  • 1/2 cup almond flour
  • 1 tbsp coconut flour
  • 1/3 cup cashew butter
  • 1/4 cup coconut sugar
  • 2 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla

Toppings

  • 8 chocolate squares cut in half
  • 8 marshmallows cut in half

Preparation

  1. In a bowl, whisk the egg, then add in the rest of the cookie cup ingredients and mix together well

  2. Add to a greased mini cupcake pan

  3. Bake for 10 minutes at 350F

  4. When they’re done, remove

  5. Take a spoon and press a hole in the middle of them

  6. Add the chocolate on top of the hole, let it melt a little bit, then add the marshmallows on top

  7. Then broil for 2 mins, keep an eye on them the whole time

  8. Let them cool a little bit then eat up
