Fluffy Vegan Blueberry Pancakes

Ingredients

  • 1/2 cup applesauce
  • 1/2 cup nondairy milk
  • 1 tbsp lemon juice
  • 1–2 tbsps maple syrup (optional)
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil
  • 1 1/4 cup oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup blueberries

Preparation

  1. Whisk together all the ingredients.

  2. Gently fold in the blueberries.

  3. Heat a nonstick pan over medium-low heat.

  4. Melt or spray with a small amount of coconut oil.

  5. Spoon batter into the pan (about 1/4 cup per pancake), and gently spread with the back of a spoon.

  6. Cook for 4-5 minutes per side on low heat, flipping when golden around the edges.

  7. Repeat until all the batter is gone.

  8. Stack, top, and eat.
