Vegan Blueberry Pancakes for Two

Ingredients

  • 1 banana, mashed
  • 2 tablespoons ground flaxseed meal
  • 1/2 cup oat flour
  • 1/2 cup buckwheat flour
  • 1 scoop vegan peanut butter banana protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 1/3 cups almond milk
  • 1 cup blueberries

Toppings

  • Trader Joe’s creamy almond butter
  • extra blueberries
  • maple syrup

Preparation

  1. Mash the banana.

  2. In a large bowl, mix together the dry ingredients: ground flaxseed meal, oat flour, buckwheat flour, protein powder, cinnamon, and baking powder.

  3. In another bowl, combine the wet ingredients: mashed banana, vanilla extract, and almond milk.

  4. Stir the wet ingredients into the dry ingredients until just combined.

  5. Gently fold in the blueberries.

  6. Heat a non-stick pan or griddle over medium heat and lightly grease it.

  7. Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.

  8. Top the pancakes with creamy almond butter, extra blueberries, and maple syrup.
