Triple Chocolate Vegan Pancakes

Ingredients

  • 1 banana, mashed
  • 2 tablespoons ground flaxseed meal
  • 1 cup oat flour
  • 1.5 scoops vegan protein powder (Planta mint cacao)
  • 2 tablespoons cacao powder (Jet black)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1.5 cups almond milk

Toppings

  • strawberries
  • chocolate almond butter (Noosh brands)
  • brown rice crisps (One Degree Organics)
  • mini vegan chocolate chips (Enjoy Life Foods)

Preparation

  1. Mash the banana in a bowl.

  2. Mix the dry ingredients together in a separate bowl: oat flour, ground flaxseed meal, protein powder, cacao powder, and baking powder.

  3. Combine the wet ingredients: mashed banana, vanilla extract, apple cider vinegar, and almond milk.

  4. Mix the wet and dry ingredients to form a batter.

  5. Heat a griddle or non-stick pan over medium heat and lightly grease if needed.

  6. Pour batter onto the griddle to form pancakes, cook until bubbles appear and edges set, then flip and cook until golden brown.

Serving

  1. Top the pancakes with strawberries, chocolate almond butter, brown rice crisps, and mini vegan chocolate chips.
