Chocolate Peanut Butter Buckwheat Waffles
Ingredients
- 1 mashed banana
- 2 tablespoons ground flaxseed meal
- 2/3 cup buckwheat flour (can use oat flour)
- 1/2 medium zucchini
- 1 scoop vegan peanut butter protein powder
- 2 tablespoons cacao powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- 1 1/2 cups almond milk
Preparation
It is impossible to mess up a waffle recipe unless the batter is too runny or the waffle pan is not sprayed.
Cook the mixture in a waffle iron for 4 minutes, though the time may vary depending on the machine used (e.g., Cuisinart).
Top the waffles with blueberries, almond butter, and vegan peanut butter granola.
