Grain-Free Vegan Waffles with Icing

Ingredients

  • 1 banana (mashed)
  • 2 tablespoons ground flaxseed meal
  • 1/2 medium zucchini (grated)
  • 2/3 cup quinoa flour
  • 1 scoop mint cacao vegan protein powder
  • 2 tablespoons cacao powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1 cup almond milk

Icing

  • 1/2 container organic creamy cashew yogurt
  • 2 tablespoons peanut butter powder

Preparation

  1. Mash the banana.

  2. Add the remaining ingredients to the bowl to create the batter.

  3. Slowly incorporate the liquid until you have the perfect consistency.

  4. Cook the batter in a waffle iron until golden brown

Icing

  1. Mix the cashew yogurt and peanut butter powder.

  2. Place in the freezer for 10 minutes to thicken.
