Vegan Chocolate Protein Pancakes
Ingredients
Pancake
- 1 cup oat flour
- 1/4 cup silverfernbrand chocolate plant protein
- 1 tbsp cacao powder
- 1 ripe banana
- 3/4 cup plant milk
- 2 tbsp baking powder
- 1/2 tsp salt
Chocolate sauce
- 1 tbsp coconut oil
- 1 1/2 tbsp silverfernbrand chocolate protein powder
- 1/2 tbsp cacao
- 1 tbsp maple syrup
Preparation
Mash the ripe banana.
Add the plant milk, protein powder, cacao powder, flour, baking powder, and sea salt.
Mix the ingredients well with a fork, but do not over mix to keep air bubbles.
Oil the griddle with coconut oil.
Add about 3 tablespoons of pancake batter to the griddle.
Cook over medium heat for about five minutes on one side, then flip and cook for another minute or two.
Repeat until all batter is used; this makes about eight pancakes.
Melt the coconut oil in the microwave for 20-30 seconds.
Add the cacao powder slowly, about 1/2 tablespoon at a time.
Add the chocolate protein powder slowly, about 1/2 tablespoon at a time, to avoid clumping.
Add the maple syrup and mix again.
Pour the chocolate sauce over the pancakes.
Top with bananas, nuts, or any other topping of choice.
