Vegan Whole Wheat Pancakes

Ingredients

  • 2 cups whole wheat flour
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 2 1/2 c cashew milk, room temperature
  • 1/4 c coconut oil, melted & cooled
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract

Preparation

  1. In a large bowl, whisk together the dry ingredients: whole wheat flour, coconut sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, combine the wet ingredients: cashew milk, melted coconut oil, lemon juice, and vanilla extract.

  3. Pour the wet mixture into the dry ingredients and stir until just combined, being careful not to overmix.

  4. Heat a griddle or non-stick pan over medium heat and lightly grease with oil or cooking spray.

  5. Spoon about 1/4 cup of batter per pancake onto the griddle and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
