Vegan Whole Wheat Pancakes
Ingredients
- 2 cups whole wheat flour
- 2 tbsp coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 2 1/2 c cashew milk, room temperature
- 1/4 c coconut oil, melted & cooled
- 2 tbsp lemon juice
- 2 tsp vanilla extract
Preparation
In a large bowl, whisk together the dry ingredients: whole wheat flour, coconut sugar, baking powder, baking soda, and salt.
In a separate bowl, combine the wet ingredients: cashew milk, melted coconut oil, lemon juice, and vanilla extract.
Pour the wet mixture into the dry ingredients and stir until just combined, being careful not to overmix.
Heat a griddle or non-stick pan over medium heat and lightly grease with oil or cooking spray.
Spoon about 1/4 cup of batter per pancake onto the griddle and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
