Vegan Blueberry Pancakes

Ingredients

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 tbsp coconut sugar
  • 1 tbsp coconut oil
  • 1 cup dairy free milk
  • 1/2 cup frozen blueberries
  • fruit & almond butter to top

Preparation

  1. Combine your dry ingredients first and mix them well

  2. Then add in the coconut oil and dairy free milk

  3. Once they are combined, fold in the blueberries

  4. Let the mixture sit for a few minutes so the baking powder can activate

  5. Grease a pan with some coconut oil and turn the heat on to medium

  6. Then take 1/4 cup scoop to make each pancake

  7. Top with fresh berries, banana slices, almond butter, or any other topping of choice
