Fluffy Vegan Quinoa Pancakes for Breakfast

Ingredients

  • 1/2 cup (130g) unsweetened applesauce
  • 1/2 cup (120g) non-dairy milk
  • 1 tbsp lemon juice
  • 1 1/2 tsps baking powder
  • 1/2 tsp baking soda
  • 2 tbsp maple syrup
  • 1 1/2 cups (185g) quinoa flour
  • Pinch of salt

Preparation

  1. Blend or whisk all the ingredients together.

  2. Cook in a nonstick pan lightly coated with coconut oil over medium heat for 2-3 minutes, using 1/4 cup batter per pancake to make about 8 pancakes.

  3. Add toppings and enjoy.
