Fluffy Vegan Quinoa Pancakes for Breakfast
Ingredients
- 1/2 cup (130g) unsweetened applesauce
- 1/2 cup (120g) non-dairy milk
- 1 tbsp lemon juice
- 1 1/2 tsps baking powder
- 1/2 tsp baking soda
- 2 tbsp maple syrup
- 1 1/2 cups (185g) quinoa flour
- Pinch of salt
Preparation
Blend or whisk all the ingredients together.
Cook in a nonstick pan lightly coated with coconut oil over medium heat for 2-3 minutes, using 1/4 cup batter per pancake to make about 8 pancakes.
Add toppings and enjoy.
