Fluffy Gingerbread Pancakes for Weekend Breakfast

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 tbsp lemon juice
  • 2 tbsps molasses
  • 1 tsp vanilla extract
  • 1 1/4 cup oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt

Preparation

  1. Whisk together all the ingredients.

  2. Spoon batter into a preheated nonstick pan (about 1/4 cup per pancake) and gently spread with the back of a spoon.

  3. Cook on low heat for 4-5 minutes per side, flipping when golden around the edges.

  4. Repeat until all the batter is gone (I usually get 5-6).

  5. Top with yogurt, fruit, nuts, maple syrup, etc and eat!
