Vegan Peanut Butter Banana Baked Oatmeal

Ingredients

  • 2 cups old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 over ripe bananas
  • 1 1/2 cups almond milk
  • 1/4 cup creamy peanut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat oven to 350°F

  2. In a large bowl, mix together the dry ingredients: oats, cinnamon, baking powder, and salt

  3. In another bowl, mash the bananas and whisk in the wet ingredients: almond milk, peanut butter, maple syrup, ground flaxseed, and vanilla extract

  4. Combine the wet and dry mixtures until well blended

  5. Pour the batter into a greased baking dish

  6. Bake for 30-40 minutes or until golden and set
