Vegan Peanut Butter Banana Baked Oatmeal
Ingredients
- 2 cups old-fashioned oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 over ripe bananas
- 1 1/2 cups almond milk
- 1/4 cup creamy peanut butter
- 2 tablespoons maple syrup
- 1 tablespoon ground flaxseed
- 1 teaspoon vanilla extract
Preparation
Preheat oven to 350°F
In a large bowl, mix together the dry ingredients: oats, cinnamon, baking powder, and salt
In another bowl, mash the bananas and whisk in the wet ingredients: almond milk, peanut butter, maple syrup, ground flaxseed, and vanilla extract
Combine the wet and dry mixtures until well blended
Pour the batter into a greased baking dish
Bake for 30-40 minutes or until golden and set
