Vegan Gluten-Free Gingerbread Pancakes

Ingredients

  • 1/2 cup (120g) unsweetened applesauce
  • 1/2 cup (120g) almond milk
  • 1 tbsp lemon juice
  • 2 tbsps (40g) molasses
  • 1 tsp vanilla extract
  • 1 1/4 cup (150g) oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp salt

Preparation

  1. Whisk together all the ingredients in a bowl.

  2. Heat up a nonstick skillet over medium-low heat and melt or spray with a small amount of coconut oil.

  3. Spoon about 1/4 cup of batter per pancake onto the skillet and gently spread with the back of a spoon if it's too thick to spread on its own.

  4. Cook on low heat for 4-5 minutes per side, flipping when golden around the edges.

  5. Repeat the process until all the batter is used.

  6. Top the pancakes with yogurt, fruit, nuts, maple syrup, or any desired toppings.

  7. Enjoy!
