Vegan Gluten-Free Funfetti Cupcakes
Ingredients
- 1/2 cup applesauce
- 1/4 cup coconut oil
- 3/4 cup almond milk
- 1/2 cup agave or maple syrup
- 2 tsps vanilla extract
- 1 3/4 cups oat flour
- 1 1/2 cups almond flour
- 1/4 cup tapioca flour
- 2 tsps baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup sprinkles (optional)
Preparation
Note: If you use naturally dyed sprinkles, some of the fun gets lost in the fetti when you bake them, but they still taste like a party.
Preheat the oven to 350ºF.
Whisk together the applesauce, coconut oil, almond milk, agave, and vanilla.
Stir in the flours, baking powder, baking soda, and salt until combined.
Gently fold in the sprinkles.
Scoop into a lined or greased cupcake pan (filling each at least 3/4 of the way, makes 10-12).
Bake for 25-30 minutes at 350ºF.
Cool completely before frosting.
