Vegan and Gluten-Free Apple Scones

Ingredients

  • 1 1/2 cups oat flour
  • 1 cup gluten free flour
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • pinch of salt
  • 3 tbsp coconut oil
  • 1/2 cup applesauce
  • 1/4 cup almond milk
  • 1 small apple, peeled, cored and finely chopped
  • 1 tbsp turbinado or coconut sugar

Preparation

  1. Preheat oven to 225c (440f) and line a baking sheet with parchment paper

  2. In a bowl, whisk together the applesauce, almond milk and coconut oil

  3. Add all the dry ingredients and stir until just combined

  4. Fold in the apple pieces, i find it easiest to work with my hands

  5. Sprinkle some flour on a flat work surface, and shape the dough into a disk

  6. Cut into 8 triangles and place on the parchment paper

  7. Brush the scones with a little almond milk and sprinkle with turbinado or coconut sugar

  8. Bake for 10 to 12 minutes or until crisp and golden brown

  9. Best served freshly baked but can be stored in an airtight container for up to 2 days
