Fluffy Gingerbread Oat Pancakes

Ingredients

  • 100g oat flour
  • 120ml unsweetened almond milk
  • 1 ripe banana
  • 2 tsp baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tsp maca powder (optional)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Small pinch of salt

Toppings

  • 100g almond milk yoghurt
  • 35g vegan vanilla protein powder
  • 1 tbsp gingerbread syrup
  • 5g dark chocolate
  • Berries

Preparation

  1. Blend all the pancake ingredients together.

  2. On a low-medium heat, lightly grease a frying pan with one cal oil spray or coconut oil and spoon a ladle of mixture into the pan. Cook for 2-3 minutes on one side before turning over. Repeat on the other side until golden brown.

  3. For the toppings, mix together the yoghurt and protein powder. Top with remaining ingredients.
