Fluffy Gingerbread Oat Pancakes
Ingredients
- 100g oat flour
- 120ml unsweetened almond milk
- 1 ripe banana
- 2 tsp baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 tsp maca powder (optional)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Small pinch of salt
Toppings
- 100g almond milk yoghurt
- 35g vegan vanilla protein powder
- 1 tbsp gingerbread syrup
- 5g dark chocolate
- Berries
Preparation
Blend all the pancake ingredients together.
On a low-medium heat, lightly grease a frying pan with one cal oil spray or coconut oil and spoon a ladle of mixture into the pan. Cook for 2-3 minutes on one side before turning over. Repeat on the other side until golden brown.
For the toppings, mix together the yoghurt and protein powder. Top with remaining ingredients.
