Fluffy Orange Creamsicle Pancakes for Breakfast

Ingredients

  • 1 cup probiotic dairy-free yogurt drink
  • 1/2 cup coconut or soy milk
  • 1 tbsp chia seeds
  • 1 tbsp apple cider vinegar
  • 1/3 cup fresh orange juice
  • 2 teaspoons grated orange zest
  • 1 1/2 cup all-purpose wheat flour
  • 2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil melted

Preparation

  1. Mix all the above ingredients and set aside for a few minutes.

  2. Melt 1/2 tsp of coconut oil in a pan and scoop the pancake batter and cook until golden brown on both sides.

  3. Serve pancakes with fresh oranges, non-dairy vanilla yogurt, and maple syrup.
