Vegan Fluffy Pancakes

Ingredients

  • 1 cup non-dairy milk
  • 1 tsp apple cider vinegar
  • 1 cup gf flour (Bob’s red mill 1 to 1 flour is good for this)
  • 2 tsp baking powder
  • 2 tbsp coconut sugar
  • pinch of salt
  • coconut oil for frying

Preparation

  1. Combine the milk and apple cider vinegar, stirring well. Set aside

  2. In a mixing bowl, whisk together flour, baking powder, sugar and salt

  3. Add the oil to the milk mixture and stir. Then pour into dry mixture

  4. Mix until JUST combined. Lumps are okay! Do not over-mix. Should be a thick batter! Like very thick lol. Look at the last pic to see how thick it is in pan

  5. Heat a frying pan to medium heat. Add a little coconut oil and add 1/4 cup of batter into the pan. It made 3 large pancakes for me

  6. Cook till the bottom is golden brown and flip over till the other side is cooked too! It should be very thick and fluffy still

  7. I plated it with bananas, coconut shreds, and maple syrup. Tried to add coconut whip and kinda failed w the pics but still it tasted good
